The Shank is the back part of the leg of lamb and when cooked on the bone makes the perfect Sunday lunch. All of our lamb is certified Irish Lamb. The Shank of lamb is ideal for serving smaller numbers such as 3/4 adults, and yields plenty of lean, tender meat.

Cooking Tip: Lance flesh with sharp knife and insert half cloves of garlic and sprig of rosemary into incision. Seal all the lamb before roasting it in the oven to seal in those lovely juices.
