Pork and Leek Sausage

Our own family recipe , these sausages are made with fresh leek and an absolute mouth water sensation. It is the classic gourmet sausage. The meat we use is little courser giving it a real bite. They have won the gold medal in the National Irish Sausage Competition which is a testament of their quality and full flavour.

The best way to cook our homemade beef sausages is to evenly fry it for 3 minutes and slightly and then finished it off in the oven for 25 minutes at 180°. Do not prick them before cooking. Serve with creamy mashed potato and onion gravy to make a wonderful hearty dinner or of course as part of a delightful breakfast.
