The cut used to make this bacon comes from the side - or belly - of the pig. When it is cured, it becomes bacon. An abundance of fat gives bacon its sweet flavor and tender crispiness.

For best results cook this bacon in the oven for 20 minutes at 180c however it also grills very well. It is also can be added to many dishes to give them real added flavour such as Penne with Spicy Tomato Sauce and Sizzling Bacon.

This is the kind of pasta dish that is perfect for when there’s nothing much left in the fridge. It is very easy to prepare, and great served with a lightly dressed rocket salad.

Cooking Tip: Cut the rind every inch along its length, it helps to keep the rasher flat and stops it curling.
