An underused and underrated cut, the breast of lamb although fatty is undeniably tasty. It is also known as the lap of lamb and is very popular for roasting. One way to make a very tasty, inexpensive roast out of the breast of lamb is to bone and roll the breast and then rolled up covered with a dry garlic and herb stuffing.

The breast of lap is also very popular for stewing and its extra fat allows for slow stewing without drying the meat out.
