The traditional dish just like you used to have as a child because there nothing better than that warm feeling you get inside from traditional dishes, but with the added twist of smoked bacon. This dish is quick and easy to make for those days when you are in a rush.

  • 1kg potatoes peeled and diced
  • Diced smoked chicken
  • Thiny sliced cabbage
  • 4tbsps of cream or milk
  • 1 spring onion

Add the peeled and diced potato to a pot of cold water, cover, place over a high heat and bring to the boil. Reduce heat and simmer until the potato is tender when pierced with a fork.

With a potato masher, mash all the potatoes until smooth.

Mix all the ingredients in a saucepan and simmer on a low heat for 5-6 mins until the bacon and cabbage is fully cooked through.

Serve the colcannon with some Irish butter and sliced spring onion.
