Baked fillet of ham with an orange marmalade glaze.



  • Ingredients:
  • Fillet of Ham
  • 5 tbsps of Orange Marmalade
  • 75g Brown Sugar
  • Plenty of whole cloves

To Cook

Place the fillet of ham in a large pot of water and bring to the boil.

Simmer it for 2 hours and then take off the heat, allowing it to cool.


Remove the fillet of ham from the water and score a few lines in the fat with a sharp knife, then in the opposite direction to create a diamond pattern.

Insert the cloves in the fat between each diamond and place the fillet of ham on a baking tray. 

Melt the marmalade in a saucepan and then pour or brush the marmalade onto the ham.

Sprinkle some brown sugar over the top of the ham.

Cover the ham loosely with some tinfoil and bake in the oven for about an hour at 150c/300f/gas mark.

Remove the ham from the oven, take off the tinfoil and return the ham to the oven.


Turn up the heat and allow the ham to cook further for about 20mins until the skin becomes caramelised.

Allow the ham to rest for 3o minutes before slicing.
