We source our Free Range Turkey from McCaughey Farms in Castleblayney, Co. Monaghan who have been supplying quality turkey since 1951. Full oven ready Turkey are very popular for the Christmas dinner served with a delicious festive gravy.

Getting the timing of the Turkey is vital to ensure you cook the Turkey all the way through but also that the Turkey is moist and wet and not over cooked

To ensure the doneness of the Turkey you should look for the following:

-Make sure there is no pink meat left

-The juices should run clear when the thickest part of the leg and breast meat are pierced with a clean fork or skewer.

- check that the meat is piping the all the way through - it should be steaming

-In cavity stuffed turkeys, the stuffing should also be piping hot at the centre as this is the slowest point to cook in stuffed turkeys

Cooking Tip: Turn the turkey upside down half way through the cooking times to allow all those lovely juices to filter back into the turkey breast.

Cooking Tips: Try putting tin foil in the leg so they do not get over cooked- remember the tin foil should be shiny side.
