The lamb shank comes from the knuckle off the shoulder. All our lamb has all been naturally reared and full of distinctive flavour. Many people have a real affection for lamb shanks, thinking of them as a bit of a treat. Bake them slowly and you will be rewarded with "melt in your mouth" dish where the meat is just falling off the bone - easy and comforting food! The key is to slow cook it at a low temperature. This transforms this piece of meat into a rich and juicy piece of deliciousness They're really good served with creamy mashed potato and steamed greens to contrast with the roasting stickiness of the lamb.
