We source all our game from Wild Irish Game. Wild Irish Game Ltd. are a totally Irish owned, family run company, who have been processing all species of Wild Game in their E.U. approved processing plant in Glenmalure, since 1997. They are the longest established large game, and small game, processing company in Ireland, where all products are produced under in house quality assurance system (HACCP) and strict veterinary supervision.

    We source all our quails from Wild Irish Game in Co. Wicklow. It's a small bird, so one will serve one person as a starter, and you'll need two as a main course. It has a fairly high proportion of lean, meaty flesh to bone, and a delicate flavour.
