Goose fat is the consistency of butter and has been attributed to cooking the best tasting roast potatoes. Firstly it allows the potatoes
to crisp up at a much higher temperature compared to conventional cooking oil but also it gives a distinctive rich and vibrant
flavour to the potatoes.

Cooking Tip: Massage goose fat on the breast of the turkey to keep it extra moist whilst also adding rich flavour and helping the
skin of the turkey crisp with burning.
