Lambs Hearts

Lambs hearts are fresh off all the full lambs that FX Buckley get every week. They can be delicious and it is not at all difficult to make them so. Stuffing the heart can also add another dimension to the flavour.

Cooking Suggestion: Seal the Lambs hearts all over and then put in oven for 40 minutes. Deglaze pan with a table spoon full of brandy. Add three tablespoons full of chicken stock. Reduce by half then add a teaspoon of wholegrain mustard and cream, cook for 1 minute and finish with small nob of butter and then pour over the kidneys.
