Lambs Kidneys

Fresh lamb kidneys are a real treat for foodies and a good alternative to lambs liver. Essential for the classic steak and kidney pie but also wonderful coated in flour and pan fried in sauté onions. James Joyce famously quoted FX Buckley in Ulysses say he used to go to Buckley every Thursday with his father.

Cooking Suggestion: Cut the kidney in half and fry on both sides, remove from the pan and set aside. Deglaze pan with a table spoon full of brandy. Add three tablespoons full of chicken stock. Reduce by half then add a teaspoon of wholegrain mustard and cream, cook for 1 minute and finish with small nob of butter and then pour over the kidneys.
