Forget the gammon for now. It's very tender, but collar of bacon is a lot more juicy and succulent. It has plenty of lean meat, but slow-cooking it makes the most of its sweet flavours and soft texture, making for a real hearty Irish dish.

The key to cooking this joint is a slowly simmer for the required time and then try glazing it in the oven.

Serving suggestion: Try serving it with a pea puree and some buttery mash potato. Add some fresh mint to the pea purée along with the butter to give it a comforting kick.
