The tenderloin comes from the full pork loin. It's a smallish prime, lean fillet of tender meat that comes from underneath the backbone of the pork loin. As the name indicates, the tenderloin is one of the most tender cuts of pork.

Stuffed Pork steaks makes an elegant dinner for a small dinner party. For the best cooking results one should roast the joint, covering it with tin foil and then open the foil with ten minutes left of cooking time to help crisp the outside of the meat. Serve with apple sauce for a divine dinner.

Cooking tips:
Before you roast roast the pork steak , it is very important you brown and seal it all over to lock in those delicious juices.
Place pork joint on a bed of finely cut vegetables (size of the joint determines the size of the veg)
Add cider/apple juice from the start that will produce a delicious gravy
